Awesome Ribs

          Rub and Ribs:

2 tablespoons chili powder
1/2 teaspoon cayenne pepper. (Gives a little spice) Eliminate if not wanted.
1 tablespoon sweet paprika
1 tablespoon ground cumin
1 teaspoon salt
3/4 teaspoon ground black pepper
4 pounds baby back pork ribs

1 (12-ounce) bottle root beer

Sauce:

1 (18-ounce) jar barbecue sauce
1/2 cup water
2 tablespoons brown sugar
1 tablespoon espresso powder

Instructions:

1.                     Preheat oven to 400F.
2.                     To make the rub, combine first 5 ingredients. Rub spice mixture over ribs. Place ribs in roasting pan or Dutch          oven.
3.                     Pour root beer into bottom of pan (not over the ribs). Cover pan tightly with foil. Bake ribs for 1 to 1 1/2 hours, until tender and browned.
4.                     To make the sauce, stir barbecue sauce, water, brown sugar and espresso powder in a heavy saucepan. Cook 10 minutes.
5.                     Heat grill to medium heat. Keep the flare ups down as much as possible. Brush ribs with sauce. Grill ribs until heated through, about 3-5 minutes per side.  Serve ribs with remaining sauce.

Spicy take on the Cranberry Relish for Thanksgiving

Make this relish a day ahead to allow the flavors to meld and the heat from the jalapeƱo to mellow. Or, for more heat, leave the pepper seeds in.



Ingredients

1 cup water
 1 cup sugar
1 (12-ounce) package cranberries
2 fresh jalapeƱos, seeded and finely chopped
1 tablespoon fresh cilantro
1/2 teaspoon cumin
2 to 3 green onions, sliced
1 tablespoon fresh lime juice

Prep Time - 10 Cook Time - 10

Instructions

Combine water and sugar in a saucepan. Bring to a boil. Add cranberries. Return to a boil; cook 10 minutes without stirring. Pour into a bowl and allow to cool.

Add remaining ingredients and mix lightly. Refrigerate. Serve chilled or at room temperature.

Quick Skillet Burrito

Skillet Burrito

1lb       ground beef
1          pack of taco seasoning (Taco Bell)
1          jar of chunky salsa
1          small can of chopped green chillis
4          10” flour tortillas or 6 smaller ones
Cheddar cheese
Sour cream
Any other toppings you like

1.                  Cook beef as instructed on seasoning packet
2.                  When complete mix in salsa, chillis
3.                  cook 3-5 mins
4.                  cut tortillas into approx 2” squares/pieces
5.                  mix tortillas into skillet
6.                  serve with toppings.

Weight Watchers Quick Lunch

Being that I am doing Weight Watchers with my daughter I am now trying to find quick meals that fit into the plan for Weight Watchers. Here is a quick recipe for a wrap that even if you are not on a diet you will love. I will post the whole recipe but I did it a little different and made it quicker. I basically cooked boneless chicken breast, sliced into strips. The I used a flour tortilla and put the coleslaw mix on it then the chicken breast and drizzled Hoisin sauce over it. A small amount of shredded cheddar can be added if you want.

Ingredients;
2 cups cooked chicken, shredded
4 flour tortillas
1 (8 ounce) bag coleslaw mix
2 tablespoons vegetable oil
1 tablespoon soy sauce
2 tablespoons hoisin sauce

Preparation;
1. Heat the vegetable oil in a nonstick skillet.
2. Add the coleslaw mix and cook for about 2-3 minutes (just until slightly softened but still crunchy).
3. Add the chicken pieces and cook to heat through for another 1 or 2 minutes.
4. Stir in the soy sauce and hoisin sauce.
5. Remove from the heat.
6. Place the tortillas on a plate and cover with plastic wrap.
7. Microwave the tortillas on high for about 45-60 seconds (until softened).
8. Place 1/4 of the chicken and cabbage mixture on a tortilla.
9. Fold each tortilla end over, then roll to make an enclosed wrap.

Great for the Morning!

Do you wake up and get the kids ready for school and find yourself running late for work? Then all you have time for is to grab your coffee and run. Well here is a great recipe handed down from my Mom for zucchini bread. It is great to make and freeze some loaves.  Perfect thing to grab and go in the morning with the coffee!
Zucchini Bread

Ingredients                                     Preheat oven to 350

3 eggs
2 cups sugar
½ cup sour cream
1 cup oil
1 tsp vanilla
3 cups flour
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
¾ cups chopped nuts
2 cup grated zucchini

Instructions

1. Mix first 5 ingredients
2. Add in and mix next 5 ingredients
3. Finally add in chopped nuts and zucchini
4. Grease and flour 2 loaf pans
5. Equally fill both pans
6. Cook for approx 1 hr 10 min

Optional glaze

Mix powdered sugar and water to a thick consistency and drizzle over top of loaves.

Crockpot Buffalo Chicken

Well this recipe came to me from a friend.  Since my kids love buffalo chicken I decided to try it.  It turned out very good and the kids ate it up. They did say they didn't like the celery seeds, so it must be a taste thing. If you don't like buffalo sauce then this is not for you. I may try something different next time and change the flavor a little. I may use 12 oz of Ken's Buffalo Wing Sauce instead of Frank's Hot Sauce.  Give it a shot if you like buffalo sauce and let me know how you like it.
